Secret Recipes: Author Beverly Ovalle

Welcome to Secret Recipes. As you all know, the authors you love know how to cook up some amazing romances. But, did you know that most of us also love to cook, bake and grill? Sometimes our characters even request that we make something they like just so we can share it with you, the readers. This is the place for you to find all of those recipes. Happy Tuesday! Today, Beverly Ovalle is joining us with one of her favorite recipes she'd when her kids had a sleepover or if she's hungry and doesn't want to mess up a lot of dishes. Check this one out!!

Beverly Ovalle's No-Mess Breakfast:

Preheat the oven to 350 degrees

spray cooking oil
peppers (optional) - finely chopped
cheese - grated

Lightly spray the muffin pans with olive oil. (I use a hand sprayer rather than an aerosol can)
Mix the eggs with milk like you were preparing scrambled eggs.
Add the chopped peppers to the egg mix. (You can add all sorts of ingredients as long as they are finely chopped.)
Line the outside of the muffin cups with bacon and pour the egg mixture so that it is within 1/4 to 1/8 inch from the top of the cup.
Sprinkle the eggs with cheese and you can add more chopped peppers too.

Bake at 350 degrees for about 20-25 minutes.
I check on them around 15 minutes and make sure the cheese is not burning. I keep an eye on them so they don't over cook or aren't pulled out before they are done.

As an alternate, you can use whole eggs rather than scramble them.

If you would like a healthier version use turkey bacon, egg whites and the cheese is optional or use low fat or vegan cheese.

I occasionally make them so they are like baked omelets so the sky's the limit for what ever you want to add.
