Peanut Butter Cookies
(Adapted from the Better Homes and Gardens New Cookbook. They melt in your mouth!)
½ cup butter or margarine
½-3/4 cup peanut butter
½ cup granulated sugar
½ cup packed brown sugar
½ teaspoon baking soda
½ teaspoon baking powder
½ teaspoon vanilla
1 ¼ cups all purpose flour
Preheat oven to 375*
In a large mixing bowl beat the butter/margarine and peanut butter together. Add the sugar, brown sugar, baking soda and baking powder. Beat until combined, scraping the sides of the bowl. Mix in egg and vanilla. Add in the flour slowly until all mixed.
Shape dough into small balls then roll them in the extra sugar. Set them on the cookie sheet then flatten the cookie by making a criss cross with a fork. Bake in a 375* oven for 7-9 minutes or until the bottoms are lightly browned. Allow to cool. Makes about 36 cookies.
